Authentic flavors of Le
Marche
In Petritoli, the table tells the story of the area: traditional cured meats, aged cheeses, olives all'ascolana, vincisgrassi and homemade desserts. All accompanied by local wines such as Passerina and Rosso Piceno. A tasteful journey through the Fermo hills.
Agriculture and local products
Agriculture has always been one of the pillars of the local economy and finds its most fertile cradle in the Aso Valley: a lush territory, devoted to horticulture and fruit growing, which offers genuine products of the highest quality. The hills of Petritoli are designed by centuries-old olive trees and vineyards cared for with dedication, from which come fine extra-virgin olive oil and excellent wines such as Passerina, Pecorino, Montepulciano and Sangiovese. Locally grown cereals are the basis of exquisite artisanal pastas, often produced locally, with techniques that respect tradition.
In recent years, alongside the historical productions, small realities dedicated to artisanal beer have also sprung up, capable of reinterpreting the raw materials of the territory with creativity and sustainability. To complete the agri-food heritage, the norcineria (traditional pork butchery) proudly preserves ancient knowledge, offering cured meats with an authentic taste and rich history.

Traditional dishes
Among the symbolic dishes of Petritoli’s culinary tradition are Moccolotti de lo Vatte, a semolina pasta similar to pacchero, seasoned with a tasty sauce made from mixed poultry meat. This ancient recipe preserves the authentic flavors and gastronomic memory of the village, recalling the festive lunches of families of the countryside, especially during the wheat harvest period. Even today, Moccolotti de lo Vatte is the star of the the traditional event Festa de le Cove, the heartfelt historical re-enactment that celebrates the farming culture and deepest roots of the Petritolese community.
